2 large Bell Peppers (any color, sliced into strips)
1 large Yellow Onion (sliced into half-moons)
1 tablespoon Olive Oil
1 teaspoon Dried Oregano
1/2 teaspoon Garlic Powder
Salt and Black Pepper to taste

Instructions
Wash the bell peppers and remove the seeds. Slice them into strips about half an inch wide. Peel the onion and slice it into similar-sized half-moons. Place the vegetables in a large mixing bowl.
Drizzle the olive oil over the peppers and onions. Add the dried oregano, garlic powder, salt, and black pepper. Toss everything together until the vegetables are evenly coated with the oil and spices.
You can leave the sausages whole for a juicier result, or slice them into 1-inch rounds if you prefer more crispy edges. If leaving them whole, use a fork to prick the casings once or twice to prevent them from bursting.
Place the seasoned vegetables into the air fryer basket in an even layer. Nestled the sausages on top of or amongst the vegetables. Do not overcrowd the basket; if you have a smaller air fryer, you may need to cook in two batches.
Set the air fryer to 400°F (200°C). Cook for 12 to 15 minutes. About halfway through the cooking time, shake the basket or use tongs to toss the ingredients. This ensures the peppers don’t burn and the sausages brown evenly on all sides.
The sausages are done when they reach an internal temperature of 160°F. The peppers should be soft with slightly charred edges. If you prefer them softer, add another 2 to 3 minutes of cook time.
