Instructions
Wash the bell peppers and remove the seeds and stems. Slice the peppers and the onion into strips about 1/2 inch wide. If you prefer bite-sized pieces, you can cut the sausage links into 1-inch rounds, or leave them whole for a traditional look.
In a large mixing bowl, combine the sliced peppers, onions, and sausages. Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and black pepper. Toss everything together until the vegetables are evenly coated in the oil and spices.
Preheat your air fryer to 380°F (190°C) for a few minutes. Place the mixture into the air fryer basket. Try to spread it out as much as possible, though some overlapping is fine. If you have a very small air fryer, you may want to cook this in two batches to ensure proper browning.
Cook at 380°F for 15 to 18 minutes. Halfway through the cooking time (around the 8 or 9-minute mark), remove the basket and give it a good shake to redistribute the ingredients. This ensures the sausages brown evenly and the peppers don’t burn on one side.
Check that the sausages have reached an internal temperature of 160°F (71°C). The vegetables should be tender with slightly charred edges. Remove from the air fryer and let it rest for 2 minutes before serving.
