Step 1: Prepare the Batter. In a medium mixing bowl, whisk together the pancake mix and pumpkin pie spice. Step 2: Prepare the Molds. Lightly grease your silicone egg bite molds or silicone muffin cups with a bit of cooking spray or melted butter. This ensures the bites pop out easily once they are finished cooking.
Step 3: Fill the Molds. Spoon the batter into the prepared molds, filling each cavity about 3/4 of the way full. This leaves enough room for the pancake bites to rise without overflowing.
Step 4: Air Fry. Place the filled mold into the air fryer basket. Set the air fryer to 320°F (160°C) and cook for 8 to 10 minutes. At the 8-minute mark, check them with a toothpick; if it comes out clean, they are done.
Step 5: Cool and Release. Carefully remove the mold from the air fryer. Let the pancake bites sit for 2 to 3 minutes to firm up. Gently pop them out of the silicone molds and serve warm.
