½ cup canned pumpkin puree (not pumpkin pie filling)
1 large egg
1 teaspoon pumpkin pie spice
½ teaspoon vanilla extract
2 tablespoons maple syrup
Cooking spray or melted butter for greasing

Instructions
Preheat your air fryer to 320°F (160°C). Lightly grease silicone mini-muffin cups or a silicone egg bite mold with cooking spray to ensure the pancake bites release easily after cooking.
In a medium mixing bowl, whisk together the pumpkin puree, egg, milk, maple syrup, and vanilla extract until the mixture is smooth and well combined.
Add the pancake mix and pumpkin pie spice to the wet ingredients. Gently stir the batter with a spatula or whisk until just combined. Be careful not to overmix, as a few small lumps are perfectly fine and help keep the bites fluffy.
Spoon the batter into the prepared silicone molds, filling each about 3/4 of the way full. This allows room for the pancake bites to rise during the cooking process.
Place the molds into the air fryer basket. Cook at 320°F (160°C) for 7 to 9 minutes, or until a toothpick inserted into the center of a bite comes out clean. If they need more time, add 1-minute increments.
Carefully remove the molds from the air fryer and let them cool for 2 minutes. Pop the bites out of the molds and serve warm with your favorite toppings.
