Instructions
Start by cutting your chicken breast and butternut squash into even, 1-inch cubes. This ensures that everything cooks at the same rate. While you are chopping, preheat your air fryer to 400°F (200°C) for about 3 to 5 minutes.
In a large mixing bowl, combine the chicken cubes and the squash. Drizzle the olive oil over the top, then sprinkle with the pumpkin pie spice, garlic powder, salt, and black pepper. Toss everything together thoroughly until every piece of chicken and squash is well-coated in the spice mixture.
Place the seasoned chicken and squash into the air fryer basket in a single layer. If your air fryer is small, you may need to cook in batches to avoid overcrowding. Cook at 400°F for 15 to 18 minutes. Halfway through the cooking time, take the basket out and give it a good shake to ensure even browning.
Check the chicken to ensure it has reached an internal temperature of 165°F and the squash is fork-tender. Remove from the air fryer and, if desired, drizzle with a little bit of maple syrup for a sweet and salty finish. Garnish with fresh parsley and serve immediately.
