Start by prepping your vegetables and chicken. Ensure the chicken cubes and pumpkin chunks are roughly the same size, about one inch, so they cook at the same rate. Halve the Brussels sprouts and place everything into a large mixing bowl.
In a small bowl, whisk together the olive oil, maple syrup, pumpkin pie spice, garlic powder, smoked paprika, salt, and pepper. Pour this mixture over the chicken and vegetables. Toss everything thoroughly until every piece is well-coated with the spice blend.
Preheat your air fryer to 390°F (200°C) for about 3 to 5 minutes. A preheated air fryer ensures that the chicken starts searing immediately, which helps lock in the moisture and creates a better texture.
