  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons pure maple syrup (for glaze)
  • 1 tablespoon milk (for glaze)

Instructions

  1. In a medium saucepan over medium heat, combine the water, butter, and pumpkin puree. Bring the mixture to a gentle boil, stirring occasionally to ensure the butter is completely melted and the pumpkin is well incorporated.
  2. Reduce the heat to low. Add the flour, pumpkin pie spice, and salt all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan. Remove the pan from the heat and let it cool for about 5 minutes.
  3. Add the egg and vanilla extract to the dough. Use a hand mixer or a wooden spoon to beat the mixture until it is smooth and glossy. The dough should be thick enough to hold its shape but soft enough to pipe.
  4. Transfer the dough into a piping bag fitted with a large star tip. Line your air fryer basket with parchment paper or lightly grease it. Pipe 4-inch long strips of dough into the basket, leaving space between each one so the air can circulate.
  5. Set your air fryer to 375°F (190°C). Cook the churros for 10 to 12 minutes, or until they are golden brown and firm to the touch. You may need to work in batches depending on the size of your air fryer.
  6. While the churros are cooking, mix the granulated sugar and cinnamon in a shallow bowl. In a separate small bowl, whisk together the powdered sugar, maple syrup, and milk to create the glaze. As soon as the churros come out of the air fryer, toss them in the cinnamon sugar. Drizzle the maple glaze over the top before serving.
