  • 1 refrigerated pie crust (room temperature)
  • 1 cup pecans, finely chopped
  • 1/3 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 large egg, beaten
  • 1 pinch of salt

Instructions

  1. Unroll the refrigerated pie crust on a lightly floured surface. Use a 2.5-inch or 3-inch round cookie cutter to cut out 12 circles. Gently press each circle into a silicone mini muffin liner or a double-layered paper liner to form a small cup shape.
  2. In a medium mixing bowl, whisk together the beaten egg, brown sugar, light corn syrup, melted butter, vanilla extract, and salt until the mixture is smooth and well-combined. Stir in the finely chopped pecans until they are evenly coated with the liquid mixture.
  3. Carefully spoon about one tablespoon of the pecan mixture into each of the prepared crust cups. Be careful not to overfill them, as the filling will bubble and expand slightly during the cooking process.
  4. Preheat your air fryer to 325°F (160°C). Place the filled liners into the air fryer basket in a single layer, ensuring they are not touching. Cook for 8 to 10 minutes, or until the crust is golden brown and the filling has set and is slightly bubbly.
  5. Carefully remove the bites from the air fryer and place them on a wire rack. Let them cool completely in their liners for at least 15 minutes. This cooling period is essential for the filling to firm up properly before you remove the liners.
