Instructions
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, pumpkin pie spice, and salt until well combined. This ensures the leavening agents and spices are evenly distributed.
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or two forks to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. Keeping the butter cold is essential for a flaky texture.
In a separate small bowl, stir together the pumpkin puree, heavy cream, and maple syrup. Make sure the pumpkin is smooth and well-incorporated with the liquids.
Gently fold the wet ingredients and the crispy bacon bits into the dry ingredients using a spatula. Mix until just combined. Be careful not to overwork the dough, as this can make the scones tough.
Turn the dough onto a lightly floured surface and pat it into a circle about 1 inch thick. Use a sharp knife to cut the circle into 8 even wedges. Brush the tops lightly with a little bit of heavy cream.
Preheat your air fryer to 350°F (175°C). Place the scones in the air fryer basket in a single layer, leaving space between them (you may need to cook in batches). Air fry for 10-12 minutes or until the tops are golden brown and a toothpick comes out clean.
While the scones cool slightly, whisk together the powdered sugar, maple syrup, and milk to create a thick glaze. Drizzle the glaze over the warm scones and serve immediately.
