  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup pumpkin puree (not pie filling)
  • 1 large egg
  • 3 tablespoons maple syrup
  • 1/2 cup cooked bacon bits, crispy
  • 2 tablespoons heavy cream (for brushing)
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons maple syrup (for glaze)
  • 1 teaspoon milk or water (for glaze)

Instructions

  1. Step 1: Whisk Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, pumpkin pie spice, and salt until well combined and lump-free.

  2. Step 2: Cut in the Butter

    Add the cold, cubed butter to the flour mixture. Use a pastry cutter or two forks to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized bits of butter remaining.

  3. Step 3: Mix Wet Ingredients

    In a separate medium bowl, whisk together the pumpkin puree, egg, and 3 tablespoons of maple syrup until the mixture is smooth and the egg is fully incorporated.

  4. Step 4: Combine into a Dough

    Pour the wet ingredients into the dry ingredients. Use a spatula to gently fold the mixture together until just moistened. Fold in the crispy bacon bits during the last few turns of the spatula. Be careful not to overmix.

  5. Step 5: Shape and Cut

    Turn the dough out onto a lightly floured surface. Gently knead it 2-3 times until it holds together. Pat the dough into a circle about 1 inch thick. Use a sharp knife to cut the circle into 8 even wedges.

  6. Step 6: Air Fry the Scones

    Line your air fryer basket with a piece of perforated parchment paper. Place the scones in the basket, leaving space between them (you may need to work in batches). Brush the tops with heavy cream. Air fry at 350°F (175°C) for 10-12 minutes or until the tops are golden brown and a toothpick comes out clean.

  7. Step 7: Glaze and Serve

    While the scones cool slightly, whisk together the powdered sugar, remaining maple syrup, and milk to create a thick glaze. Once the scones are warm but not hot, drizzle the glaze over the tops. Let the glaze set for a few minutes before serving.
