  • 1 lb chicken breast tenderloins (about 8–10 pieces)
  • 1/4 cup Dijon mustard
  • 2 tablespoons yellow mustard
  • 1/4 cup honey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1.5 cups Panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or avocado oil cooking spray

Instructions

  1. Start by patting the chicken tenderloins dry with paper towels. This helps the coating stick better. Lightly sprinkle the chicken with salt and black pepper on both sides.
  2. In a medium-sized shallow bowl, whisk together the Dijon mustard, yellow mustard, honey, garlic powder, and smoked paprika. In a second shallow bowl, place the panko breadcrumbs. If you want more flavor, you can add a pinch of salt to the breadcrumbs as well.
  3. Take one chicken tender and dip it into the honey mustard mixture, ensuring it is fully submerged and coated. Lift it out and let any excess drip off. Immediately place it into the panko bowl, pressing the crumbs firmly onto the chicken so they adhere well. Repeat with all tenders.
  4. Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Place the tenders in a single layer, making sure they do not touch. Lightly spray the tops of the tenders with oil to help them brown. Cook for 6 minutes, then flip the tenders over. Spray the other side and cook for another 5 to 6 minutes, or until the internal temperature reaches 165°F.
