In a medium-sized bowl, whisk together the honey, Dijon mustard, yellow mustard, garlic powder, smoked paprika, salt, and black pepper. Stir until the mixture is smooth and well combined.
Add the chicken tenders to the bowl with the honey mustard sauce. Toss them thoroughly until every piece of chicken is completely coated in the sticky sauce. If you have time, let them marinate for 10-15 minutes for even more flavor.
Place the Panko breadcrumbs in a shallow dish. One by one, take a chicken tender from the honey mustard mixture and press it into the breadcrumbs. Ensure both sides are well-coated, pressing down firmly so the crumbs stick.
Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with olive oil spray. Place the tenders in a single layer in the basket, making sure they do not touch. Lightly spray the tops of the tenders with olive oil to help them brown.
Cook the chicken for 6 minutes, then carefully flip each tender over. Spray the other side with a little more olive oil and cook for another 5-6 minutes, or until the internal temperature reaches 165°F (74°C) and the coating is golden brown.
