1.5 cups shredded Mexican blend cheese or cheddar cheese
1/4 cup canned black beans, rinsed and drained (optional)
1/2 cup sour cream (placed in a piping bag or plastic bag with a small corner cut off)
2–3 large black olives (for making “spiders”)
Optional: Sliced jalapeños or cooked shredded chicken for filling
Cooking spray (olive oil or avocado oil)
Instructions
Preheat your air fryer to 370°F (188°C) for about 3 minutes. While it heats up, lay two of the flour tortillas flat on a clean work surface or cutting board. Lightly spray one side of each tortilla with cooking spray to ensure a golden, crispy finish.
Evenly distribute the shredded cheese over the two tortillas. If you are using black beans, shredded chicken, or jalapeños, sprinkle them over the cheese layer. Place the remaining two tortillas on top of the fillings and press down gently to seal them together. Lightly spray the top tortillas with cooking spray.
Place one or both quesadillas in the air fryer basket (do not overlap). Cook at 370°F for 5 to 7 minutes. Halfway through the cooking time, carefully flip the quesadillas using a spatula to ensure even browning. They should be golden brown and the cheese should be fully melted.
Remove the quesadillas from the air fryer and let them cool for 1 minute. Using the sour cream in the piping bag, pipe four or five concentric circles starting from the center of the tortilla and moving outward. Take a toothpick or the tip of a knife and drag it from the center circle out to the edge of the tortilla in straight lines (like spokes on a wheel). This will create the classic spider web pattern.
To create a “spider,” cut one black olive in half lengthwise for the body. Slice another olive into thin strips to create the legs. Place the olive body in the center or on the side of the web and arrange the leg strips around it. Serve immediately while the cheese is still gooey.
