1/4 cup black beans, rinsed and drained (optional filling)
1/2 teaspoon taco seasoning
Cooking spray (olive oil or avocado oil)
1/4 cup sour cream (placed in a small piping bag or a plastic bag with the corner snipped)
4–6 whole black olives (pitted)
Salsa or guacamole for serving
Instructions
Preheat your air fryer to 370°F (185°C) for about 3 minutes. While it heats up, lay two tortillas on a clean work surface. Lightly spray one side of each tortilla with cooking spray to help with browning.
Flip the tortillas so the sprayed side is down. Evenly distribute the shredded cheese and black beans onto the tortillas. Sprinkle a little taco seasoning over the cheese for extra flavor. Place the remaining two tortillas on top and lightly spray the tops with cooking spray.
Place the quesadillas into the air fryer basket. If your air fryer is small, you may need to cook them one at a time. Use an air fryer rack or a toothpick to hold the top tortilla in place if your air fryer has a strong fan. Cook at 370°F for 4 minutes, then carefully flip and cook for another 3-4 minutes until golden brown and crispy.
Remove the quesadillas from the air fryer. Using the sour cream in the piping bag, draw three or four concentric circles starting from the center and moving outward. Use a toothpick to draw lines from the center circle out to the edge of the tortilla. This will pull the sour cream into a classic spider web shape.
Slice one black olive in half lengthwise to create the spider’s body. Place it in the center of the web. Slice another olive into thin slivers to create eight little legs and place them around the body. Repeat for the second quesadilla.
