  • 1/2 cup pumpkin puree (plain, not pie filling)
  • 2 tablespoons brown sugar
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1 large egg (beaten for egg wash)
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • Orange food coloring
  • Halloween-themed sprinkles or black decorative icing

Instructions

  1. Step 1: Prepare the Pumpkin Filling
    In a small mixing bowl, combine the pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract. Stir the mixture until it is smooth and the sugar has fully incorporated. Set this aside while you prepare the dough.
  2. Step 2: Cut the Pie Crust
    Unroll the refrigerated pie crusts on a lightly floured surface. Use a knife or a pizza cutter to cut the dough into equal-sized rectangles (about 3×4 inches). You should be able to get 8 rectangles per crust for a total of 16 pieces, which will make 8 pop tarts. Alternatively, use a pumpkin-shaped cookie cutter for a festive look.
  3. Step 3: Fill and Seal the Pastries
    Place 8 of the rectangles on your workspace. Spoon about 1 tablespoon of the pumpkin mixture into the center of each rectangle, leaving a half-inch border around the edges. Brush the edges with a little bit of the beaten egg. Place the remaining 8 rectangles on top. Use a fork to crimp the edges together firmly to seal the filling inside.
  4. Step 4: Air Fry the Pop Tarts
    Lightly grease your air fryer basket or line it with parchment paper. Place the pop tarts in the basket in a single layer, ensuring they do not touch. Brush the tops with the remaining egg wash. Air fry at 350°F (175°C) for 8 to 10 minutes, or until they are golden brown and crispy. Remove and let them cool completely on a wire rack.
  5. Step 5: Glaze and Decorate
    While the pop tarts cool, whisk together the powdered sugar and milk in a small bowl until smooth. Add a few drops of orange food coloring and stir. Once the pop tarts are cool, spread the orange glaze over the top. Immediately add your Halloween sprinkles or use black icing to draw Jack-o’-lantern faces on the orange surface.
