  • 2 refrigerated pie crusts (ready-to-use)
  • 1/2 cup canned pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 large egg (for egg wash)
  • 1 cup powdered sugar
  • 1–2 tablespoons milk
  • Orange food coloring
  • Black decorating icing or chocolate chips

Instructions

  1. In a small mixing bowl, combine the pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract. Stir until the mixture is smooth and the sugar has fully incorporated into the pumpkin.
  2. Unroll the refrigerated pie crusts on a lightly floured surface. Using a knife or a rectangular cookie cutter, cut out 16 equal-sized rectangles (approximately 3×4 inches). If you have a pumpkin-shaped cutter, you can use that for extra festive flair.
  3. Place about 1 tablespoon of the pumpkin filling onto the center of 8 of the rectangles. Spread it slightly, leaving a border around the edges. Top each filled piece with one of the remaining rectangles. Use a fork to crimp the edges tightly, sealing the filling inside.
  4. Whisk the egg with a teaspoon of water in a small bowl. Lightly brush the top of each sealed pop tart with the egg wash. This will help them turn a beautiful golden brown in the air fryer.
  5. Place the pop tarts in a single layer in the air fryer basket, making sure they do not touch. You may need to work in batches. Cook at 350°F (175°C) for 7 to 9 minutes, or until the pastry is crisp and golden.
  6. While the pop tarts cool, whisk together the powdered sugar, milk, and orange food coloring until smooth. Once the pop tarts are completely cool, spread the orange glaze on top. Use black icing or chocolate chips to draw spooky Jack-o’-lantern faces on each one.
