Lightly spray the air fryer basket with olive oil spray and preheat the unit to 375°F (190°C) for about 3 minutes to ensure an even cook.
Take your cheddar cheese slices and use a round cookie cutter or a glass to cut them into circles that fit the size of your pizza crusts. Use a small paring knife to carefully cut out triangle eyes and a jagged mouth from each cheddar circle, just like you would carve a real pumpkin.
Lay the pizza crusts on a clean surface. Spread about two tablespoons of marinara sauce over each crust, leaving a small border for the “crust.” Sprinkle a thin layer of shredded mozzarella over the sauce.
Carefully place the carved cheddar cheese circle on top of the mozzarella. Place a small piece of green bell pepper at the top center of each pizza to act as the pumpkin stem. You can use olive slices inside the eye cutouts for extra detail if desired.
Place the assembled pizzas into the air fryer basket, ensuring they do not overlap. Cook at 375°F for 4 to 6 minutes, or until the cheddar is melted and the edges of the crust are golden brown.
Remove the pizzas carefully using a spatula. Let them sit for 1-2 minutes so the cheese sets before serving. This prevents the “face” from sliding off when you take your first bite!
