1 package refrigerated pie crusts (2 crusts included)
1/2 cup pumpkin puree
2 tablespoons granulated sugar
1/2 teaspoon pumpkin pie spice
1 large egg, beaten (for egg wash)
1 tablespoon coarse sanding sugar or cinnamon sugar (optional)
Flour for dusting the work surface
Instructions
In a small mixing bowl, combine the pumpkin puree, granulated sugar, and pumpkin pie spice. Stir until the mixture is smooth and the sugar is fully incorporated. Set this aside while you prepare the dough.
Lightly flour your work surface and unroll the pie crusts. Use a round 3-inch cookie cutter or the rim of a large glass to cut out 16 circles. You may need to gently re-roll the scraps to get all 16 pieces.
Take 8 of the dough circles and use a small paring knife to cut out jack-o-lantern faces. You can do simple triangles for eyes and a jagged line for the mouth. These will be the “tops” of your hand pies.
Place the 8 solid circles on a flat surface. Spoon about 1 tablespoon of the pumpkin filling into the center of each solid circle, spacing them evenly and leaving a small border around the edges.
Lightly brush the edges of the filled circles with the beaten egg. Place a “face” circle on top of each filled circle. Use a fork to crimp the edges together tightly, ensuring the filling is sealed inside.
Brush the tops of the assembled hand pies with the remaining egg wash. If desired, sprinkle with coarse sugar or a little cinnamon sugar for extra crunch and sweetness.
Preheat your air fryer to 375°F (190°C). Place the pies in the air fryer basket in a single layer, making sure they do not touch. Cook for 8 to 10 minutes, or until the crust is golden brown and flaky. Work in batches if necessary.
