  • 1 package refrigerated pie crust (contains 2 crusts)
  • 1 cup pumpkin pie filling (or your choice of jam/fruit filling)
  • 1 egg (beaten for egg wash)
  • 1 teaspoon sugar or cinnamon sugar
  • Optional: Powdered sugar for dusting

Instructions

  1. Preheat your air fryer to 350°F (175°C). While the air fryer is heating up, lightly flour your work surface to prevent the dough from sticking. Prepare your egg wash by beating one egg in a small bowl and set it aside.
  2. Carefully roll out the refrigerated pie crusts. Using a pumpkin-shaped cookie cutter or a large round glass, cut out an even number of shapes. You should aim for about 16 pieces total to make 8 complete hand pies.
  3. Take half of your dough shapes (8 pieces) and use a small, sharp paring knife to carve out jack-o-lantern faces. You can make simple triangle eyes and a jagged mouth. These will serve as the top crusts for your pies.
  4. Place a tablespoon of pumpkin pie filling onto the center of each solid dough shape, leaving room around the edges. Lightly brush the edges with the beaten egg wash. Place the carved dough shapes on top. Use the tines of a fork to crimp the edges together tightly, ensuring the filling stays inside.
  5. Brush the tops of the assembled pies with more egg wash and sprinkle with sugar or cinnamon sugar. Place the pies in the air fryer basket in a single layer, making sure they do not touch. Air fry for 8 to 10 minutes, or until the crust is golden brown and flaky.
  6. Carefully remove the hand pies from the air fryer and let them cool on a wire rack for a few minutes. If desired, lightly dust them with powdered sugar before serving for a “ghostly” effect.
