  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • Optional: Tzatziki sauce and fresh parsley for garnish

Instructions

  1. In a medium mixing bowl, combine the cubed chicken, olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Toss well to ensure every piece of chicken is evenly coated. For the best flavor, let the chicken marinate for at least 10 to 15 minutes.
  2. Preheat your air fryer to 400°F (200°C). Preheating ensures that the chicken starts cooking immediately upon contact with the basket, which helps lock in the juices and creates a better sear.
  3. Place the marinated chicken pieces in the air fryer basket in a single layer. Do not overcrowd the basket; cook in batches if necessary. Air fry for 10 to 12 minutes, shaking the basket halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
  4. While the chicken is cooking, divide your cooked quinoa or brown rice into four serving bowls. This will serve as the hearty foundation for your Greek chicken bowl.
  5. Top the grains with the diced cucumbers, halved cherry tomatoes, sliced red onions, and Kalamata olives. Arrange the vegetables in sections around the bowl for a beautiful, professional presentation.
