  • 3 large Russet potatoes, peeled and cut into 1/4-inch sticks
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon ground black pepper
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Place your cut potato sticks into a large bowl of cold water. Let them soak for at least 30 minutes. This process removes excess starch from the outside of the potatoes, which is the secret to getting them extra crispy in the air fryer.
  2. Drain the potatoes and lay them out on a clean kitchen towel or paper towels. Pat them until they are completely dry. If the potatoes are wet, they will steam instead of crisping up, so do not skip this step.
  3. In a large dry bowl, toss the potato sticks with olive oil, garlic powder, onion powder, salt, and black pepper. Make sure every fry is evenly coated with the oil and spices to ensure consistent flavoring.
  4. Preheat your air fryer to 400°F (200°C). Place the potatoes in the air fryer basket in a single layer if possible. Cook for 15 to 20 minutes. Every 5 to 7 minutes, remove the basket and give it a good shake to ensure the fries brown evenly on all sides.
  5. Once the fries are golden brown and crispy, transfer them to a bowl while they are still hot. Immediately toss them with the freshly grated Parmesan cheese and chopped parsley. The residual heat will help the cheese melt slightly and stick to the fries.
