  • 3 large Russet potatoes, peeled and cut into 1/4-inch sticks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 cloves fresh garlic, finely minced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place your sliced potato sticks in a large bowl of cold water. Let them soak for at least 30 minutes. This process removes excess starch, which is the secret to getting a truly crispy fry that doesn’t turn soggy.
  2. Drain the potatoes and pat them thoroughly dry with a clean kitchen towel or paper towels. Once dry, place them in a clean bowl and toss with olive oil, garlic powder, salt, and pepper until every fry is evenly coated.
  3. Preheat your air fryer to 400°F (200°C). Place the potatoes in the air fryer basket in a single layer, working in batches if necessary. Cook for 18-20 minutes, shaking the basket every 5 minutes to ensure even browning and crisping.
  4. While the fries are hot, transfer them to a large mixing bowl. Immediately toss them with the grated Parmesan cheese, minced fresh garlic, and chopped parsley. The residual heat will melt the cheese slightly and mellow the bite of the fresh garlic.
  5. Give the fries one final toss to ensure the toppings are well-distributed. Serve immediately while they are at their peak crispness.
