Take your thick-cut bread slices and cut each one into three even strips. Using thick bread like Brioche or Texas Toast is essential so the sticks don’t become too soggy or fall apart when dipped in the custard.
In a shallow bowl or pie plate, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt. Whisk until the eggs are fully incorporated and the cinnamon is well-distributed throughout the liquid.
Preheat your air fryer to 350°F (175°C) for about 3 minutes. Lightly grease the air fryer basket with non-stick cooking spray or a small amount of melted butter to prevent the bread from sticking.
Submerge each bread strip into the egg mixture. Ensure all sides are coated, but do not let them soak for more than a few seconds. If the bread absorbs too much liquid, it will become mushy and won’t crisp up properly in the air fryer.
Place the dipped sticks in the air fryer basket in a single layer, making sure they do not touch or overlap. Cook at 350°F (175°C) for 4 minutes. Open the basket, flip each stick over, and cook for another 3 to 4 minutes until they are golden brown and crispy.
Remove the sticks from the air fryer. If desired, immediately toss them in a mixture of cinnamon and sugar while they are still hot for an extra sweet crunch.
