  • 1 small sugar pumpkin (about 2 pounds)
  • 2 tablespoons melted coconut oil or unsalted butter
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional: Cooking oil spray

Instructions

  1. Start by slicing the top off the pumpkin. Cut the pumpkin in half and scoop out the seeds and stringy pulp. Peel the skin using a sharp vegetable peeler or a knife. Cut the pumpkin flesh into thin sticks, roughly 1/2 inch thick, to ensure they cook evenly.
  2. Place the pumpkin sticks into a large mixing bowl. Drizzle with the melted coconut oil or butter and add the salt. Toss thoroughly until every fry is well-coated. This helps the fries get crispy and allows the cinnamon sugar to stick later.
  3. Preheat your air fryer to 375°F (190°C). Place the pumpkin sticks in the air fryer basket in a single layer, ensuring they are not overcrowded. Cook for 12 to 15 minutes, shaking the basket halfway through. The fries should be tender on the inside and slightly browned on the edges.
  4. While the fries are cooking, whisk together the sugar and ground cinnamon in a clean bowl. As soon as the pumpkin fries come out of the air fryer, transfer them to the bowl with the cinnamon sugar. Toss gently while they are still hot so the sugar adheres to the fries.
