Start by slicing the top off the sugar pumpkin. Cut the pumpkin in half and scoop out all the seeds and stringy guts. Use a sharp peeler or a knife to remove the tough outer skin. Once peeled, slice the pumpkin flesh into fries about 1/2 inch thick and 3 inches long.
Place the pumpkin fries into a large mixing bowl. Drizzle with your choice of oil and toss thoroughly to ensure every piece is lightly coated. In a small separate bowl, whisk together the sugar, cinnamon, and salt. Sprinkle about half of this mixture over the pumpkin and toss again.
Preheat your air fryer to 375°F (190°C). Place the pumpkin fries in the air fryer basket in a single layer. You may need to work in batches to avoid overcrowding. Cook for 12 to 15 minutes, shaking the basket halfway through, until the fries are tender and the edges are golden brown.
Remove the hot fries from the air fryer and place them back into the mixing bowl. Immediately toss them with the remaining cinnamon sugar mixture. The heat from the fries will help the sugar stick and slightly caramelize.
