Step 1: Drain and Rinse. Open the can of chickpeas and pour them into a fine-mesh strainer. Rinse them thoroughly under cold running water to remove the canning liquid (aquafaba) and excess salt. Shake the strainer well to remove as much water as possible.
Step 2: Dry Thoroughly. This is the most important step for a crunchy snack. Spread the rinsed chickpeas onto a clean kitchen towel or several layers of paper towels. Pat them very dry until no moisture remains on the skins. If any loose skins fall off, you can discard them or leave them for extra crispiness.
Step 3: Seasoning the Chickpeas. Transfer the bone-dry chickpeas to a medium mixing bowl. Drizzle with the olive oil and toss until every chickpea is lightly coated. Sprinkle the salt, garlic powder, smoked paprika, cumin, and black pepper over the top and toss again until the seasoning is evenly distributed.
Step 4: Air Frying. Preheat your air fryer to 390°F (200°C). Place the seasoned chickpeas into the air fryer basket in a single layer. Do not overcrowd the basket, as air needs to circulate around each chickpea to make it crispy.
Step 5: Shake and Finish. Cook the chickpeas for 15 to 20 minutes. Every 5 minutes, remove the basket and give it a good shake to ensure even browning. Start checking them at the 15-minute mark; they are done when they are golden brown and sound “hollow” or crunchy when shaken.
Step 6: Cooling. Remove the basket from the air fryer and let the chickpeas cool for at least 5 to 10 minutes. They will continue to crisp up as they cool down to room temperature.
