  • 2 large boneless, skinless chicken breasts (sliced into 4 thin cutlets)
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish
  • Olive oil cooking spray

Instructions

  1. Start by slicing your chicken breasts in half horizontally to create four thinner cutlets. Place them between two sheets of plastic wrap and gently pound them with a meat mallet until they are an even half-inch thickness. Season both sides with salt and pepper.
  2. Organize three shallow bowls in a row. In the first bowl, place the flour. In the second bowl, whisk the eggs. In the third bowl, combine the Panko breadcrumbs, grated Parmesan cheese, Italian seasoning, and garlic powder. Mix the breadcrumb mixture well to ensure the seasoning is distributed.
  3. Dredge each chicken cutlet in the flour, shaking off any excess. Dip it into the beaten eggs, ensuring it is fully submerged. Finally, press the chicken firmly into the breadcrumb mixture until it is completely coated on all sides. Repeat with all cutlets.
  4. Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with olive oil spray. Place the chicken cutlets in a single layer in the basket, making sure they do not overlap. Spray the tops of the chicken lightly with oil. Cook for 8 to 10 minutes, flipping the chicken halfway through the cooking time.
  5. Once the chicken is crispy and golden, spoon about 2 tablespoons of marinara sauce onto each cutlet. Top each with a generous portion of shredded mozzarella cheese. Place the basket back into the air fryer and cook for an additional 2 to 3 minutes, or until the cheese is melted and bubbly.
  6. Carefully remove the chicken from the air fryer. Garnish with fresh chopped basil or parsley before serving to add a pop of color and fresh flavor.
