  • 1 medium butternut squash (peeled, seeded, and cut into matchsticks)

  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Instructions

  1. Start by peeling the butternut squash with a sturdy vegetable peeler. Cut off the ends, slice the squash in half lengthwise, and scoop out the seeds. Cut the flesh into uniform matchsticks, about 1/2 inch thick, to ensure they cook evenly.
  2. In a large mixing bowl, combine the squash matchsticks with the olive oil, salt, black pepper, garlic powder, and paprika. Toss everything together thoroughly until each piece of squash is lightly and evenly coated with the oil and spices.
  3. Preheat your air fryer to 375°F (190°C). Once ready, place the seasoned squash in the air fryer basket. For the best results, arrange them in a single layer. If your air fryer is small, you may need to cook them in two batches to avoid overcrowding.
  4. Cook the squash for 15 to 20 minutes. About halfway through the cooking time, remove the basket and give it a good shake to flip the fries. Continue cooking until they are golden brown and slightly crispy on the edges.
  5. Check the tenderness with a fork. Once they reach your desired level of crispiness, remove them from the air fryer. Serve immediately while they are hot and at their peak texture.
