  • 1 medium butternut squash (approximately 2 lbs), peeled, seeded, and cut into 1-inch cubes
  • 12–14 oz smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme or rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 small red onion, chopped into large chunks

Instructions

  1. Begin by peeling the butternut squash with a vegetable peeler. Cut it in half lengthwise, scoop out the seeds, and dice the flesh into uniform 1-inch cubes. Slice your sausage of choice into rounds. If you are adding onion or bell peppers, chop them into similar sizes so everything cooks evenly.
  2. In a large mixing bowl, combine the cubed butternut squash, sliced sausage, and any additional vegetables. Drizzle with olive oil and sprinkle the garlic powder, dried thyme, salt, and pepper over the top. Toss everything thoroughly until the squash and sausage are well-coated in the oil and spices.
  3. Preheat your air fryer to 400°F (200°C) for about 3 minutes. Once hot, place the mixture into the air fryer basket. Spread it out as much as possible; it is okay if there is some overlap, but a single layer ensures the best browning.
  4. Cook the mixture for 18 to 20 minutes. About halfway through the cooking time, remove the basket and give it a good shake to redistribute the pieces. This helps the squash cook evenly on all sides. The dish is done when the squash is fork-tender and the sausage is browned and crispy.
  5. Taste a piece of the squash to ensure it is fully cooked. If you prefer a more charred finish, add another 2-3 minutes of cook time. Serve immediately while hot.
