Step 1: Prep and Dry the Wings Use paper towels to pat the chicken wings completely dry. Removing excess moisture is the most important step for achieving crispy skin. Place the dried wings in a large mixing bowl.
Step 2: Season and Coat In a small bowl, whisk together the baking powder, salt, black pepper, and garlic powder. Sprinkle this mixture over the wings and toss thoroughly until every wing is evenly coated. The baking powder helps break down the proteins in the skin to create bubbles that crisp up beautifully.
Step 3: Arrange in the Air Fryer Preheat your air fryer to 400°F (200°C). Place the wings in the air fryer basket in a single layer. Make sure they are not overlapping or touching too much, as the air needs to circulate around each piece to crisp it up.
Step 4: Air Fry to Perfection Cook the wings for 15 minutes. Open the basket and use tongs to flip each wing over. Cook for an additional 10 minutes, or until the wings look golden brown and the skin is visibly crispy. If you prefer them even crispier, you can add 2-3 more minutes.
Step 5: Toss in Buffalo Sauce While the wings are finishing, whisk together the buffalo sauce, melted butter, and optional honey in a large clean bowl. Once the wings are done, immediately transfer them into the sauce bowl and toss until they are fully coated. Serve immediately while hot.
