1 medium head of cauliflower, cut into bite-sized florets

Wash the head of cauliflower and pat it completely dry. Cut it into small, bite-sized florets. Ensuring the cauliflower is dry helps the batter stick much better.
In a large mixing bowl, whisk together the flour, garlic powder, salt, pepper, and water (or milk). The batter should be thick enough to coat the cauliflower without immediately dripping off, similar to pancake batter.
Add the cauliflower florets into the bowl with the batter. Toss gently until every piece is well-coated. Lift the florets out one by one, shaking off any excess batter before placing them in the air fryer.
Preheat your air fryer to 375°F (190°C). Lightly grease the air fryer basket with cooking spray. Arrange the cauliflower in a single layer, ensuring they are not touching. Cook for 15 minutes, shaking the basket halfway through to ensure even browning.
While the cauliflower cooks, mix the buffalo hot sauce and melted butter in a small bowl. Once the 15 minutes are up, transfer the cauliflower to a clean bowl, pour the sauce over them, and toss to coat thoroughly.
Place the sauced cauliflower back into the air fryer basket. Cook for an additional 5 minutes at 375°F. This step allows the sauce to caramelize and the edges to become extra crispy.
