Air Fryer Avocado Toast with Egg

  • 1 thick slice of sourdough or whole-grain bread
  • 1/2 ripe avocado
  • 1 large egg
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Optional: Red pepper flakes or “Everything Bagel” seasoning
  • Olive oil spray

Instructions

  1. In a small bowl, scoop out the flesh of half an avocado. Add the lemon juice, salt, and pepper. Use a fork to mash the avocado until it reaches your desired consistency.
  2. Lightly spray both sides of your bread slice with a tiny bit of olive oil spray. Place the bread in the air fryer basket and air fry at 350°F (175°C) for 2 to 3 minutes just to give it a head start on crisping up.
  3. Spread the avocado mash evenly over the pre-toasted bread. Use the back of a spoon to create a small “well” or indentation in the center of the avocado.
  4. Carefully crack the egg into the indentation you made in the avocado. If you are worried about the egg running, you can crack it into a small ramekin first and then gently pour it onto the toast. Season the top of the egg with an extra pinch of salt and pepper.
  5. Place the assembled toast back into the air fryer basket. Cook at 350°F (175°C) for 5 to 7 minutes. At the 5-minute mark, check the egg. Cook longer if you prefer a set yolk, or take it out early if you like a runny yolk.
