Instructions
In a medium mixing bowl, combine the finely diced apples, lemon juice, 2 tablespoons of brown sugar, cinnamon, and nutmeg. Toss everything together until the apples are evenly coated with the spices and sugar. Let the mixture sit for 5 minutes to allow the flavors to meld.
In a separate small bowl, mix the rolled oats, flour, and the remaining 2 tablespoons of brown sugar. Add the cold, cubed butter. Use your fingers or a fork to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
Place the mini phyllo shells on a clean work surface. Spoon about one tablespoon of the apple mixture into each shell, pressing down slightly. Top each shell generously with the oat crumble mixture, ensuring the apples are well-covered.
Preheat your air fryer to 350°F (175°C). Carefully place the assembled apple crisp bites into the air fryer basket in a single layer. You may need to work in batches depending on the size of your air fryer. Cook for 8 to 10 minutes, or until the topping is golden brown and the apples are tender.
Remove the bites from the air fryer and let them cool for a few minutes. If desired, drizzle a little maple syrup or caramel sauce over the top before serving to add an extra touch of sweetness.
