  • 1.5 lbs boneless skinless chicken thighs or breasts
  • 1 cup fresh apple cider (unfiltered preferred)
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 teaspoon cornstarch mixed with 1 teaspoon cold water
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken dry with paper towels to ensure a good sear. In a small bowl, combine the salt, pepper, garlic powder, smoked paprika, and dried thyme. Rub the olive oil over the chicken pieces, then coat them evenly with the spice mixture.
  2. In a small saucepan over medium-high heat, combine the apple cider, brown sugar, and Dijon mustard. Bring the mixture to a boil and let it reduce by half, which should take about 8 to 10 minutes. Whisk in the cornstarch slurry and simmer for another minute until the glaze is thick enough to coat the back of a spoon.
  3. Preheat your air fryer to 375°F (190°C). Place the seasoned chicken in the air fryer basket in a single layer, ensuring they are not overlapping. Air fry for 10 minutes to develop a nice crust and cook the meat partially through.
  4. Open the air fryer basket and generously brush the apple cider glaze over each piece of chicken. Flip the chicken and brush the other side as well. This creates a sticky layer that will caramelize under the heat.
  5. Continue air frying for another 5 to 8 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). The glaze should be bubbling and slightly charred in spots. Remove from the air fryer and let the chicken rest for 5 minutes before serving.
