  • 1.5 lbs chicken thighs (boneless, skin-on or skinless)
  • 1 cup fresh apple cider
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a small saucepan over medium heat, combine the apple cider, brown sugar, Dijon mustard, and minced garlic. Bring the mixture to a simmer and let it cook for about 8 to 10 minutes, or until the liquid has reduced by half and thickened into a syrupy glaze. Set aside half of the glaze for serving and keep the other half for brushing.
  2. Pat the chicken thighs dry with paper towels. In a large bowl, toss the chicken with olive oil, dried thyme, smoked paprika, salt, and black pepper. Ensure every piece is evenly coated with the seasoning to create a flavorful base for the glaze.
  3. Preheat your air fryer to 375°F (190°C). Place the seasoned chicken thighs in the air fryer basket in a single layer, ensuring they are not overlapping. Air fry for 12 minutes, flipping the chicken halfway through the cooking time to ensure even browning.
  4. After the initial 12 minutes, open the air fryer and generously brush the chicken pieces with the cider glaze. Close the basket and continue cooking for another 5 to 8 minutes. The chicken is done when the internal temperature reaches 165°F (74°C) and the glaze is bubbly and slightly charred at the edges.
  5. Remove the chicken from the air fryer and let it rest for 5 minutes. This allows the juices to redistribute. Drizzle with the reserved glaze and garnish with fresh parsley before serving hot.
