Description

A delightful and nutritious meal featuring spaghetti squash tossed with garlic and zesty lemon, perfect as a main or side dish.


Ingredients

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (juiced and zested)
  • Salt and pepper to taste
  • Parmesan cheese (optional)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your air fryer to 375°F (190°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Brush the inside of each squash half with olive oil and generously season with salt and pepper.
  3. Place the squash halves in the air fryer basket, cut side up. Cook for about 25-30 minutes, or until the flesh is fork-tender.
  4. While the squash is cooking, heat a small pan over medium heat and sauté the minced garlic in olive oil until fragrant.
  5. Once the spaghetti squash is ready, use a fork to scrape the flesh into strands. Toss with the sautéed garlic, lemon juice, and lemon zest.
  6. Serve warm, topped with Parmesan cheese and garnished with chopped parsley.

Notes

For added flavor, consider using butter with the olive oil when sautéing garlic. Storing leftovers in an airtight container allows for up to 3-4 days of freshness.
