  • 1 can pre-cooked butter beans (13.4 ounces, drained and rinsed)
  • 1 can full-fat coconut milk (13.5 ounces)
  • 2 tablespoons lemon juice
  • 1 teaspoon ground turmeric
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt

Instructions

  1. Add the oil, finely chopped red onion, and minced garlic to a saucepan over medium heat. Sauté for about 5 minutes until the onion becomes translucent and the garlic is fragrant.
  2. Stir in the drained and rinsed butter beans along with the coconut milk, lemon juice, turmeric, black pepper, smoked paprika, oregano, and salt. Ensure all ingredients are mixed well.
  3. Allow the mixture to simmer for about 5 minutes. Stir frequently until the dish becomes creamy and the flavors meld together.
