Instructions
- Add the oil, finely chopped red onion, and minced garlic to a saucepan over medium heat. Sauté for about 5 minutes until the onion becomes translucent and the garlic is fragrant.
- Stir in the drained and rinsed butter beans along with the coconut milk, lemon juice, turmeric, black pepper, smoked paprika, oregano, and salt. Ensure all ingredients are mixed well.
- Allow the mixture to simmer for about 5 minutes. Stir frequently until the dish becomes creamy and the flavors meld together.
