  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup white chocolate chips, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9×9 inch baking pan.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press this mixture into the bottom of the prepared pan.
  3. In a large bowl, beat together cream cheese and melted white chocolate until smooth. Mix in sugar, eggs, and vanilla until well combined.
  4. Gently fold in raspberries. Pour the cheesecake mixture over the crust and smooth the top.
  5. Bake for 30-35 minutes, or until the center is set. Allow to cool, then refrigerate for at least 4 hours before cutting.
  6. Serve chilled, garnished with extra raspberries or melted white chocolate.
