- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 2 (8 ounce) packages cream cheese, softened
- 1 cup white chocolate chips, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
Instructions
- Preheat the oven to 325°F (163°C) and grease a 9×9 inch baking pan.
- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press this mixture into the bottom of the prepared pan.
- In a large bowl, beat together cream cheese and melted white chocolate until smooth. Mix in sugar, eggs, and vanilla until well combined.
- Gently fold in raspberries. Pour the cheesecake mixture over the crust and smooth the top.
- Bake for 30-35 minutes, or until the center is set. Allow to cool, then refrigerate for at least 4 hours before cutting.
- Serve chilled, garnished with extra raspberries or melted white chocolate.
Notes
For best results, use room temperature cream cheese and be gentle when folding in raspberries to maintain their shape.
