Ingredients

  • 2 cans white beans, drained and rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups spinach (optional)
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onions, carrots, and celery; sauté until softened, about 5-7 minutes.
  3. Add the garlic and sauté for an additional minute.
  4. Stir in the white beans, vegetable broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
  6. If using, stir in spinach just before serving.
  7. Season with salt and pepper to taste, and remove the bay leaf before serving.

Notes

For a creamier texture, use an immersion blender to partially blend the soup. You can customize with other vegetables or spices based on your preference.
