- 2 cans white beans, drained and rinsed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups spinach (optional)
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the onions, carrots, and celery; sauté until softened, about 5-7 minutes.
- Add the garlic and sauté for an additional minute.
- Stir in the white beans, vegetable broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
- If using, stir in spinach just before serving.
- Season with salt and pepper to taste, and remove the bay leaf before serving.
Notes
For a creamier texture, use an immersion blender to partially blend the soup. You can customize with other vegetables or spices based on your preference.
