- 8 oz spaghetti or pasta of choice
- 1 lb shrimp, peeled and deveined
- 2 cups fresh spinach
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the spaghetti according to package instructions. Drain and set aside, making sure not to overcook it to maintain the pasta’s firmness.
- Heat olive oil over medium heat in a large skillet. Once shimmering, add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet and cook until they are pink and opaque, about 3-4 minutes.
- Stir in the fresh spinach and cook until wilted. Then, add the cooked pasta, lemon juice, and lemon zest. Toss everything until well combined, and season with salt and pepper to taste.
- Serve with grated Parmesan cheese on top for added flavor.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. Reheat with a splash of water to refresh.
