Description

A comforting and aromatic Vietnamese beef noodle soup, Pho Bo, featuring tender beef, fresh herbs, and a rich, flavorful broth.


Ingredients

  • 2 lbs beef bones
  • 1 lb beef brisket
  • 1 onion, halved
  • 1 ginger, halved
  • 5 star anise
  • 4 cloves
  • 1 cinnamon stick
  • 2 tbsp fish sauce
  • 1 tbsp salt
  • 8 cups water
  • 8 oz rice noodles
  • Fresh herbs (basil, cilantro, mint)
  • Lime wedges
  • Bean sprouts
  • Sliced jalapeños

Instructions

  1. Char the onion and ginger under a broiler until blackened to infuse smoky flavor into the broth.
  2. Combine beef bones, brisket, charred onion, ginger, star anise, cloves, cinnamon stick, fish sauce, salt, and water in a large pot.
  3. Bring the pot to a boil, then reduce heat to low and let it simmer for at least 4 hours, adding brisket during the last 30 minutes.
  4. Remove the brisket and strain the broth. Cook rice noodles according to package instructions. To serve, place noodles in bowls, top with brisket slices, and ladle hot broth over them, garnishing with fresh herbs, lime wedges, bean sprouts, and jalapeños.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat broth and add fresh noodles before serving.
