Delightful and colorful spring rolls packed with vibrant vegetables and aromatic herbs, perfect for any occasion.


Ingredients

  • Rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1 cup sliced bell peppers
  • 1 cup cucumber, julienned
  • Fresh cilantro
  • Fresh mint leaves
  • Lettuce leaves
  • Soy sauce or peanut sauce for dipping

Instructions

  1. Preparation: Prepare all your vegetables and herbs by slicing the bell peppers and julienning the cucumber. Shred the carrots and cabbage into fine pieces.
  2. Soaking: Fill a shallow dish with warm water. Soak a rice paper wrapper in the warm water for about 10-15 seconds, until soft and pliable.
  3. Assembly: Place the softened wrapper on a clean surface. Lay a piece of lettuce at the bottom, then add a small amount of each prepared vegetable along with fresh cilantro and mint.
  4. Rolling: Fold the sides of the wrapper over the filling, and roll it up tightly from the bottom to the top. Repeat with remaining wrappers and filling.

Notes

Best eaten fresh. Store unwrapped rolls in an airtight container in the fridge for up to two days.
