- 4 flour tortillas
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 bell pepper, diced
- 1 cup spinach, chopped
- 1 cup mushrooms, sliced
- 1 small onion, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Sour cream and salsa for serving
Instructions
- Heat olive oil in a pan over medium heat.
- Add diced onion, bell pepper, and mushrooms to the pan. Sauté until soft and fragrant.
- Stir in chopped spinach and cook until wilted. Add salt and pepper to taste.
- Place one tortilla in a separate pan over medium heat. Sprinkle cheese on one half, add the vegetable mixture, then fold the tortilla.
- Cook until golden brown on both sides, about 3-4 minutes each side.
- Repeat with the remaining tortillas and fillings.
- Cut quesadillas into wedges and serve immediately with sour cream and salsa.
Notes
For a crispy exterior, brush tortillas with olive oil before cooking. Experiment with different veggies for unique flavors.
