Description

A delightful dish combining melted cheese and vibrant fresh vegetables, perfect for a quick lunch or light dinner.


Ingredients

  • 4 flour tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 bell pepper, diced
  • 1 cup spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced onion, bell pepper, and mushrooms to the pan. Sauté until soft and fragrant.
  3. Stir in chopped spinach and cook until wilted. Add salt and pepper to taste.
  4. Place one tortilla in a separate pan over medium heat. Sprinkle cheese on one half, add the vegetable mixture, then fold the tortilla.
  5. Cook until golden brown on both sides, about 3-4 minutes each side.
  6. Repeat with the remaining tortillas and fillings.
  7. Cut quesadillas into wedges and serve immediately with sour cream and salsa.

Notes

For a crispy exterior, brush tortillas with olive oil before cooking. Experiment with different veggies for unique flavors.
