Description

A healthy and comforting dish showcasing tender zucchini filled with a creamy ricotta made from tofu or cashews, vibrant spinach, and marinara sauce.


Ingredients

  • 2 large zucchinis
  • 1 cup ricotta (made from tofu or cashews)
  • 1 cup spinach, chopped
  • 1 cup marinara sauce
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
  2. In a mixing bowl, combine the ricotta, chopped spinach, minced garlic, nutritional yeast, salt, and pepper. Stir until well blended.
  3. Spread a layer of marinara sauce in a baking dish. Roll a zucchini strip with a spoonful of the ricotta mixture and place it seam side down in the dish. Repeat for remaining strips. Pour remaining marinara sauce on top.
  4. Cover with foil and bake for 25-30 minutes. Remove foil, bake an additional 10 minutes until golden. Garnish with fresh basil before serving.

Notes

Choose firm zucchinis for better rolling. Make the filling a day ahead for convenience.
