- 2 large zucchinis
- 1 cup ricotta (made from tofu or cashews)
- 1 cup spinach, chopped
- 1 cup marinara sauce
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
- In a mixing bowl, combine the ricotta, chopped spinach, minced garlic, nutritional yeast, salt, and pepper. Stir until well blended.
- Spread a layer of marinara sauce in a baking dish. Roll a zucchini strip with a spoonful of the ricotta mixture and place it seam side down in the dish. Repeat for remaining strips. Pour remaining marinara sauce on top.
- Cover with foil and bake for 25-30 minutes. Remove foil, bake an additional 10 minutes until golden. Garnish with fresh basil before serving.
Notes
Choose firm zucchinis for better rolling. Make the filling a day ahead for convenience.
