Vegan Southwest Egg Rolls

A delightful and healthy alternative to traditional egg rolls, filled with black beans, corn, and spices for a vibrant flavor burst.


Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 8 large tortillas
  • Oil for frying or brushing

Instructions

  1. In a large bowl, combine black beans, corn, bell pepper, onion, cumin, chili powder, lime juice, salt, and pepper. Mix well.
  2. Lay a tortilla on a flat surface and place about 2-3 tablespoons of the filling at one end.
  3. Roll tightly, folding in the sides to encase the filling completely.
  4. Heat oil in a frying pan or preheat an oven to 400°F and brush the egg rolls with oil. Fry or bake until golden brown and crispy.
  5. Serve warm with your favorite dipping sauce.

Notes

For extra flavor, add chopped jalapeños or green chilies to the filling. Consider nutritional yeast or vegan cheese for a cheesy twist.
