Ingredients

- 1 cup black beans, rinsed and drained
- 1 cup corn, canned or frozen
- 1 bell pepper, diced
- 1 small onion, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 tablespoon lime juice
- Salt and pepper to taste
- 8 large tortillas
- Oil for frying or brushing
Instructions
- In a large bowl, combine black beans, corn, bell pepper, onion, cumin, chili powder, lime juice, salt, and pepper. Mix well.
- Lay a tortilla on a flat surface and place about 2-3 tablespoons of the filling at one end.
- Roll tightly, folding in the sides to encase the filling completely.
- Heat oil in a frying pan or preheat an oven to 400°F and brush the egg rolls with oil. Fry or bake until golden brown and crispy.
- Serve warm with your favorite dipping sauce.
Notes
For extra flavor, add chopped jalapeños or green chilies to the filling. Consider nutritional yeast or vegan cheese for a cheesy twist.
