Ingredients

- 1 cup cashews
- 1 cup water
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- Soak cashews in water for at least 4 hours or overnight.
- Drain and rinse the soaked cashews.
- In a blender, combine the soaked cashews, 1 cup of fresh water, lemon juice, and a pinch of salt.
- Blend the mixture until smooth and creamy.
- If desired, add vanilla extract and blend again for added flavor.
- Use your vegan heavy cream substitute as needed in recipes.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4-5 days. Stir before using as it may separate during storage.
