- 1 cup raw cashews (soaked for at least 2 hours)
- 3 cloves garlic
- 1 cup vegetable broth
- 1/4 cup nutritional yeast
- 2 tablespoons lemon juice

- Fresh parsley for garnish
Instructions
- Begin by cooking the pasta according to package instructions. Once cooked, drain and set aside.
- In a blender, combine soaked cashews, garlic, vegetable broth, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth and creamy.
- Heat a skillet over medium heat and pour in the creamy Alfredo sauce. Gently warm, stirring occasionally.
- Add the cooked pasta to the skillet, tossing to coat the noodles thoroughly in the sauce. Serve hot, garnished with fresh parsley.
