A delicious and moist vegan banana bread made with ripe bananas and coconut oil, perfect for breakfast or snacks.

- 3 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- pinch of salt
- 1 cup sugar (or maple syrup)
- 1 teaspoon cinnamon (optional)
- 1 1/2 cups flour
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a mixing bowl, combine the mashed bananas with melted coconut oil until well blended.
- Stir in the vanilla extract, baking soda, and a pinch of salt.
- Add the sugar (or maple syrup) and cinnamon, mixing until well incorporated.
- Gradually mix in the flour until just incorporated.
- Pour the batter into the greased loaf pan and smooth the top.
- Bake in the preheated oven for 50-60 minutes, until a toothpick comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Serve warm or at room temperature. Store in an airtight container for 3 days or freeze for up to 3 months.
