Description

A delicious and moist vegan banana bread made with ripe bananas and coconut oil, perfect for breakfast or snacks.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 cup sugar (or maple syrup)
  • 1 teaspoon cinnamon (optional)
  • 1 1/2 cups flour

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a mixing bowl, combine the mashed bananas with melted coconut oil until well blended.
  3. Stir in the vanilla extract, baking soda, and a pinch of salt.
  4. Add the sugar (or maple syrup) and cinnamon, mixing until well incorporated.
  5. Gradually mix in the flour until just incorporated.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake in the preheated oven for 50-60 minutes, until a toothpick comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve warm or at room temperature. Store in an airtight container for 3 days or freeze for up to 3 months.
