Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: cream cheese glaze for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the mashed sweet potatoes and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, spices, and salt. Gradually add to the wet mixture and mix until just combined.
  5. Pour the batter into the prepared loaf pan and smooth out the top. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. Drizzle with cream cheese glaze if desired before serving.

Notes

Store in an airtight container at room temperature for up to three days or refrigerate for up to a week. Can also be frozen for up to three months.
