Delicious blueberry muffins with a soft crumb, perfect for breakfast or snacks.
Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix melted butter, eggs, milk, and vanilla until combined.
- Pour wet ingredients into dry ingredients and stir gently until just combined. Fold in blueberries.
- Divide batter into muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean. Cool in pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Serve with whipped cream or a dusting of powdered sugar for an extra treat.
